Maturation/ Winemakers Notes: Exclusively punch downs in stainless steel for primary ferment; Racked after pressing before transferring to two 320l terracotta amphorae for 9 months of aging under flor. Bottled without sulfiting—one of our only still ‘zero zero’ wines
