Marzae Field wines are fun and approachable ferments unlike you’ll find anywhere else. Our white piquette is a fizzy tropical holiday in a can. Naturally low ABV, it’s tangy and highly crushable. Piquette is made by refermenting pressed grape skins rather than letting them go to waste.

**Please note, this wine has a fault called "mouse" that develops 20-30 minutes after opening. Many people cannot taste this fault and only a portion of people find it objectionable. If you know you’re sensitive to mouse, this probably isn’t the wine for you, otherwise we recommend drinking promptly once opened and if you find this wine is not to your taste, we are happy to refund affected cans.

*You may notice the term “imitation grape wine” on the label. There’s nothing “imitation” about this wine—that’s just what Big Wine has lobbied the federal government to call piquette. 250ml cans are equivalent to two glasses of wine or 1/3 of a bottle.

Style: Sparkling co-fermentation of white wine, white wine piquette, and cider apples

Appearance: Medium yellow

Tasting notes: Passionfruit, soursop, mango, sour ale, pineapple, starfruit, meyer lemon, yellow apple, champaign currant, tangerine, spruce tip

Ingredients: 58% White Piquette (11% Vidal Stems & Skins; 23% Seyval Stems & Skins, 26% Sustainable Chenin Blanc Stems & Skins, 40% Riesling Stems & Skins), 21% Unaged M. struthiopteris 2023 (forthcoming wine made primarily of cider apple cofermented with vidal & chardonnay skins), 14% Destemmed Chardonnay, 7% Destemmed Vidal Blanc

Skin Contact: Several weeks

Maturation Process: The Seyval piquette was initially started separately for about a week prior to all components being combined to conferment together in stainless steel for several weeks before pressing and racking. A portion of a complimentary wine was added to the racked tank. A 5g/l sugar dosage was added prior to bottling for can conditioning. Cans held in warm conditions for a few weeks prior to release to encourage fermentation for carbonation.

Winemakers Notes: While technically shelf stable, refrigeration is recommended to extend the shelf life of this wine as it is low alcohol and has no added sulfites. Small amounts of citric & tartaric acid + organic yeast nutrient were added to stabilize an unhealthy fermentation resulting from a poor winemaking decision pre-maturely pressing the Seyval piquette prior to combining with the tank fermenting the remainder of the wine, and thus diluting nutrient access to the yeast in the midst of a very vigorous fermentation. Still fermented with wild yeast like all our other wines and never filtered or fined.
